Summertime Madness

Father's Day is nearly here and school is out for the summer! What to do, what to do?! Studies show most kids' schedules are abruptly changed once that final bell rings and summertime madness quickly ensues. Try keeping with a regular routine or set activities to keep those tempers in check! Even increasing the chore list (age dependent) and enrolling in extracurricular activities will make the summer breeze on by, without Mom or Dad losing a few hairs along the way...
In a day where digital lives occupy our physical lives, familial connections are key! How about trying a fresh, kid-friendly summer recipe? This month's dish is easy as pie and one the whole family can participate in!
Ingredients
8-ounces sugar cookie dough (we love this recipe from Food Network Kitchens)
1 cup whipped cream cheese, softened
2 tablespoons honey
1/2 teaspoon vanilla extract
1 cup sliced strawberries
¾ cup blueberries
Fresh mint, chopped (optional)
Directions
Preheat oven to 350-degrees F. Press cookie dough into the bottom of springform pan, making sure dough is in an even layer. Bake for 15 to 17 minutes until edges are golden brown; set aside to cool completely.
Place cream cheese, honey and vanilla in the bowl of an electric mixer fitted with a paddle attachment; mix on medium speed until smooth.
Remove outer ring from springform pan. Spread cookie crust with cream cheese mixture and top with fresh berries. Garnish with fresh mint, if desired. Cut into thin slices and serve.
Fruit pizza can be stored in the refrigerator after it has been decorated. Take out of the refrigerator about 10 minutes before serving.
